Spinach Dip Kicked Up for #10DaysofTailgate

Say the word “Spinach” to many people and if they don’t wince and turn their noses up – they might make a joke about Popeye. But for those of us who enjoy this delicious and nutritious leafy green vegetable it is a versatile ingredient in many favorite dishes. Salads, of course, and pasta dishes like lasagna and ravioli, mixed with risotto and sometimes just plain steamed with a bit of butter. But even those who don’t care for spinach may dig into this Spinach Dip Kicked Up for #10DaysOfTailgate.

We enjoy dips with chips – who doesn’t? – but also with carrots and celery too. And a dip is perfect to take to a tailgate party – whether at the game or in someones’ living room.

Some of the additional ingredients in this recipe may mitigate the high value nutrition of spinach list but I just consider that a tie game! ~ ML

Creamy dip with bits of veggies on fresh sour dough bread

Ingredients

1 -10oz pkg frozen spinach, thawed

1 pkg Knorr vegetable soup mix

  • 1-1/2 cup sour cream
  • ½ cup plain yogurt’
  • 1 cup mayo
  • 2 Tbsp El Diablo Mango Mustard
  • ⅓ cup chopped green onions, about 3
  • ⅓ cup diced celery

Optional
Round loaf sour dough bread

Instructions

  • Place thawed spinach in a clean dish towel or paper towels and squeeze as much liquid as possible out, set aside
    In a bowl mix all the remaining ingredients until well mixed
  • Break up spinach into mixture and stir to combine
  • Chill for at least 1 hour before serving

Serving Suggestion

  • Cut top ⅓ off sour dough round, pull out bread from center leaving a bowl
  • Place dip in bread bowl
  • Cut up top and removed bread to serve with dip

You can also serve with sliced baguette or crackers
